Hello! The GPIO ports in the ZYNQ PS IP have a width of 64. Is it possible to increase it? If so, how should this be done?

No, PS GPIO are physical wires between PS and PL. The number is fixed.
You can add multiple AXI GPIO controllers into your PL design if you want to have more wires to control your design. All controllers are connected to the PS AXI interfaces. This would allow you to have a huge number of wires.
